What's for dinner? Toasted Pumpkin Seeds with Sugar and Spice

Okay, this would've been nice for you all when you were carving your pumpkins earlier this past week or yesterday. Sorry. But...print this out now and keep it for next year's Halloween/fall. It is quite yummy!

So, this really isn't a "dinner" recipe but a snack or holiday recipe. I remember, growing up, my mom toasting the pumpkin seeds we scooped out from our carved pumpkin. It's just something I remember and enjoyed as a tradition and thought that it would be fun to do with our kids. It's also fun to read the book, The Pumpkin Gospel, along with your kids when you are carving the pumpkin. Or at least I know Jared enjoys the story. He and I talked about scooping out the "mushy gushies" from the pumpkin, like how God "scoops out" the mushy gushies from our hearts and then makes us new, just like we do with the pumpkin. It's a sweet book.

I searched for a good pumpkin seed recipe online and found this one, Toasted Pumpkin Seeds with Sugar and Spice at All Recipes. I was looking for a more sweet, with a tad of salty, taste. There are some recipes out there that have a spicy kick to them but that wasn't what I was looking for. Jared enjoyed these pumpkin seeds. One thing to note, they are ADDICTING! Or at least they are for us ;) So if you like pumpkin seeds and/or don't know what to do with all of yours from your carved pumpkin, then try out this recipe. It's not too difficult or involved.

Get those pumpkin seeds all scooped out, pulp thrown away and seeds rinsedPlace them on a baking sheet (I usually, okay always, line mine with foil) and bakeIn the meantime, combine the sugar, salt and pumpkin spiceI also threw in some freshly grated nutmeg. If you don't have a nutmeg sitting around to grate then the pre-ground packaged nutmeg will probably do fine. A dash or two of cinnamon would be yummy too!After the seeds toast, mix the oil and sugar in a pan. Get the sugar melted.Add the toasted pumpkin seedsAnd stir around. Be quick and don't let the seeds and sugar burn!!! You will hear and see the seeds "pop" when cooking.Once done stirring (letting the sugar fully melt and coat the seeds), add the sugar-coated seeds into the bowl with the sugar and spicesMix aroundThen you are done! Yummy! And very addicting ;)Happy eating! Or should I say "snacking?" ;)
